How do I use it?
The Lacor smoker is extremely easy to use, it is freestanding and operates on batteries. Simply put your choice of combustible in the sawdust container, turn on the motor of the ventilator and light with a match or lighter. Within seconds it will produce a tasty fog that you can then apply where you want it. The cold smoke is easy to direct with the smoking tube, and can be added at any stage of a dish. For table presentation, you can fill a glass cloche with smoke, and lift it to reveal the smoke at the table.
What can I smoke?
You can smoke almost anything. Cold smoke is gentle on foods, so you can smoke delicate foods like ice cream, butters or cocktails as well as meats and cheeses. Because the smoke is cool, you don’t need to worry about it melting or heating any of your dishes. For new culinary sensations, try smoking chocolate or popcorn, fish fillets and sauces.
